Inspired by Muriel's excess,I reckon we need to dosomething that can compete.

Yeah dude, and there's one dish that's part of bothof our food histories that's perfect.

有一道菜融合了兩家的食物歷史,

It could only be our whole salmon, dressed up for abig night out.

我們的整條鮭魚,盛裝出席晚宴

Step one, take a fish, this is about a seven-pounder and that'll feed about 14 to 20 people.

第一步,拿出一條魚,大概2.5公斤,夠14到20個(gè)人吃

Now it's a simple poaching liquor isn't it?

簡(jiǎn)單的煮水對(duì)吧

It is. Not quite so simple as plain water though.

但也沒(méi)有煮白開(kāi)那么簡(jiǎn)單

To the fish kettle add a squeeze of lemon juice, drop in the lemons,add some bayleaves,peppercorns and a pinch of salt.

擠入一顆檸檬汁,檸檬丟進(jìn)去,加點(diǎn)月桂葉,干辣椒,一撮鹽

Bring the fish to the boil, turn off the heat, leave it to go cold, let it go cold in its ownjuices,then take that perfectly beautifully juicy poached salmon out and it's ready for workingon.

將魚煮滾,火關(guān)掉,冷涼,湯汁里冷卻,然后將那完美的漂亮多汁的水煮魚拿出來(lái)好好料理一番

Meanwhile, shall we show you how to make mayonnaise? OK man, mayo.

同時(shí),我們要展示如何做蛋黃醬。

Homemade mayo is a thing of wonder and it's easy.

蛋黃醬很簡(jiǎn)單但很好做

First off we need the yolks of two eggs and one whole egg.

首先加入兩個(gè)蛋黃和一個(gè)全蛋

Now at this point we take that and start to whisk.

這時(shí)候開(kāi)始打蛋

Homemade mayonnaise is totally different to the factory stuff.

家庭做的蛋黃醬和工廠做的完全不是一回事

The staple ingredients of mayo are eggs, raw yet again, mustard, sugar, salt, pepper and somelemon juice,but you can make it more lemony or more mustardy or you can even add garlic tomake aioli. Excellent.

主要材料是雞蛋,生的,芥末,糖,鹽,辣椒還有一些檸檬汁,你也可以多加一點(diǎn)檸檬或者芥末,甚至可以加點(diǎn)大蒜

The second the salmon water starts boiling take it off the heat.

第二步是鮭魚湯開(kāi)始沸騰,然后關(guān)掉火

I'll just put it on the windowsill.

放到窗臺(tái)上

If you leave it boiling your fish will fall apart like your old Austin Allegro used to.

如果你讓他一直沸騰,魚肉會(huì)變碎

Just let it continue to poach gently in the water as it cools.

就讓他在水里冷涼的時(shí)候慢慢變

On with the mayonnaise.

我來(lái)做蛋黃醬

Now we need oil and we found vegetable oil is the best for this.

Now it needs to be added really,really, really slowly and you haveto continue to whisk it.

非常非常慢的加入油然后開(kāi)始打蛋

And of course if you've got an electric whisk it's so easy.

如果有自動(dòng)攪拌機(jī)就會(huì)更容易

What's going on here is that you're making an edible emulsion.

你現(xiàn)在在做可食用的乳狀物

Normally oil would mix with the other ingredients but egg yolk contains a protein that allowsthe mixing to happen.

通常油不會(huì)跟其他的食材混合,但是蛋黃油蛋白質(zhì)會(huì)混合油

It has to do its job very gradually.

必須要慢慢產(chǎn)生效果

That's perfect.
