A: I'm starting a new course, French cuisine. do you think you could help me?

B: Of course! I'm French, so I know all about French cooking.
當(dāng)然可以,我是法國人,所以所有的法式做法我都知道。
A: I want to start with the basics. What is a bearnaise sauce?
我想從最基本的學(xué)起。蛋黃醬是什么?
B: Well, it's a butter based sauce with added egg yolk with the distinct flavoring of tarragon, shallots, and chervil.
哦,那主要是一種黃油醬,外加蛋黃以及風(fēng)味獨(dú)特的龍蒿、大蔥和山蘿卜做成。
A: So, it comes from the mayonnaise family, right?
那么,這也是一種蛋黃醬了?
B: Yes, just like Hollandaise sauce.

A: Every time I try to make it, it ends up lumpy. I never know why, what am I doing wrong?

B: It's a difficult sauce to perfect because it requires special attention to avoid separation and curdling. When prepared properly, it is a smooth, creamy sauce.

A: So what can I do to stop it from going lumpy?

B: If you follow the usual recipe, egg, butter, white wine vinegar, tarragon, shallots, and chervil, you shouldn't go wrong.

A: And should I whisk it constantly?

B: My favourite dish was always "moules a la mariniere". With bread, of course! Made with mussels, shallots, garlic, white wine and cream.

A:I guess that's beautiful with a big crusty bread loaf! On a cold night, sitting around the fire.
在寒冷的夜晚,坐在爐火邊,再配上一大條法式長棍面包,我想那真是妙不可言!
B: Yes. It's perfect. But I do enjoy many ever try a "croque monsieur" ?
是的,簡直是完美極J,。不過許多其它有名的法國食物我也很喜歡,比如,你吃過 “火腿干酪夾心面包片”嗎?
A: No, I don't think I have. It's a kind of sandwich, right?
沒有,好像沒吃過。那是一種三明治,對(duì)嗎?
B: Not just any sandwich. It's the most amazing roasted cheese and ham sandwich in the world!
不單單是三明治,它稱得上是世界上最美味的火腿干酪三明治。
A: Really? Why is it so great. I mean a sandwich is just a sandwich? It's nothing special. Why is French food so highly acclaimed throughout the world?
真的嗎?為什么這么有名?我是說i明治就是三明治,沒什么特別的啊。法國菜為什么還會(huì)在全世界享有盛名?
B: I think it's because French chefs slave away, (or many years to perfect the best dish. That's why their food is excellent. And because the menu are written in French, it sounds delicious too!
我想是因?yàn)榉▏鴱N師們不辭辛苦,多年來不停地完善菜肴,所以才會(huì)有這么棒。而且他們的菜單是用法語寫的,念起來感覺更好吃。
A: OK, so tonight you are taking me to a French restaurant. I want to try everything!
那好,今晚你就帶我去法國餐廳吧,我什么都想嘗嘗。
