China's restaurant chain serving Shaxian County cuisine has opened its first eatery in the United States in October but closed three hours after it was officially opened to the public as all the dishes on the menu were sold out.
中國(guó)的餐飲連鎖沙縣小吃今年10月在美國(guó)開(kāi)張了第一家分店,但在正式對(duì)外營(yíng)業(yè)僅3小時(shí)后就關(guān)門(mén)了,因?yàn)樗胁褪扯家咽垠馈?/p>
餐廳從早上8點(diǎn)營(yíng)業(yè)到晚上11點(diǎn)。午餐時(shí)間是客流高峰期,顧客多得要排隊(duì)拿號(hào)。也有許多人會(huì)打電話(huà)訂餐,然后再到店里自取。
鎮(zhèn)店之王“柳葉眉”蒸餃,保守估計(jì)一天能賣(mài)出1500個(gè)。
Originating in Shaxian County, east China's Fujian province, the Shaxian Delicacies restaurant chain has already become a great success in China, presenting customers with traditional snacks, such as peanut butter noodles and pork wontons. Their recipes originated from more than 1,000 years ago, and spread as locals left their hometown afar for work.
餐飲連鎖店沙縣小吃起源于中國(guó)東部福建省沙縣,已經(jīng)在中國(guó)大獲成功,經(jīng)營(yíng)花生醬拌面和豬肉餛飩等傳統(tǒng)小吃。沙縣小吃的制作工藝已有1000多年歷史,隨著當(dāng)?shù)厝穗x開(kāi)家鄉(xiāng)遠(yuǎn)赴外地工作而傳播開(kāi)來(lái)。
沙縣小吃制作工藝淵源傳自古中原一帶民俗,在沙縣民間有著濃厚的文化底蘊(yùn),被稱(chēng)為古代漢族傳統(tǒng)飲食的“活化石”,2007年,沙縣小吃制作工藝被福建省政府列入“非物質(zhì)文化遺產(chǎn)”名錄。
Now, these snacks have hit the streets of New York City and captured local taste buds.

The newly opened restaurant located at 818, 60th St. Brooklyn. In the past month, the restaurant has received an order every two minutes during busy hours.

試營(yíng)業(yè)期內(nèi),餐廳菜單主打沙縣小吃的“四大金剛”——扁肉、拌面、蒸餃和燉罐,再加上包含燉罐、秘制紅燒肉、拌青菜和米飯的超值套餐。一頓下來(lái),人均消費(fèi)與麥當(dāng)勞、肯德基等美式快餐價(jià)位相當(dāng)。
"It is amazing that the Shaxian Delicacies can open its eatery near my house in America. The flavors of the food here are just the same as I remember," said Ms Zheng, who was born in Fuzhou City, the capital of Fujian province.
出生于福建省福州市的鄭女士說(shuō):“故鄉(xiāng)的小吃能在美國(guó)的家附近開(kāi)店,真是太棒了!這兒的菜品跟我記憶里味道的一樣。”
To create a clean and brightly-lit environment, the owner of the Shaxian Delicacies eatery in New York, Shao Binfang, a 34-year-old Chinese American born in Fuzhou, designed an open kitchen in her restaurant.
為了打造清潔明亮的就餐環(huán)境,店長(zhǎng)邵彬芳在店里設(shè)計(jì)了開(kāi)放式廚房。34歲的邵彬芳是一名華裔美國(guó)人,出生在福州。
"When the customers can see the cooking process, it puts them at ease over food safety," said Shao.
她說(shuō):“當(dāng)顧客能看到烹飪過(guò)程時(shí),他們會(huì)對(duì)食品安全感到放心。”
如今,沙縣小吃已經(jīng)分別進(jìn)駐日本、葡萄牙和美國(guó)。
今年早些時(shí)候,沙縣小吃在日本東京的高田馬場(chǎng)站開(kāi)張了首家海外分店。據(jù)報(bào)道,開(kāi)店的前5個(gè)小時(shí)營(yíng)業(yè)額就達(dá)到了20萬(wàn)日元(約合11950元人民幣)。截至9月底,這家80平米的店月均營(yíng)業(yè)額已達(dá)大約500萬(wàn)日元。
The industry development center of the brand claimed that over 10 countries including the United States, Britain, Argentina, Australia and Canada, have shown interest in having the chain.

To adapt to the taste of foreigners, the Shaxian Delicacies has not only maintained the traditional production skills, but also made improvements.
為了迎合外國(guó)顧客的口味,沙縣小吃不僅僅保持了傳統(tǒng)制作工藝,還進(jìn)行了改良。
Wu Shaohua, owner of the Shaxian Delicacies eatery in Bordeaux, Portugal, specially prepares "fried meat" and "fried spring rolls" for local residents who like fried food.
葡萄牙波爾多沙縣小吃分店的店長(zhǎng)吳紹華介紹說(shuō),這家分店還專(zhuān)門(mén)為當(dāng)?shù)貝?ài)吃油炸食品的顧客準(zhǔn)備了“油炸扁肉”和“油炸春卷”。
And to distribute semi-finished products to its franchises worldwide, the Shaxian County is building a "central kitchen."
為了能將半成品配送給全球分店,沙縣小吃集團(tuán)還打造了“中央廚房”。
"A basket of steamed dumplings for 50 cents, delicious but not expensive, that's my childhood memories of the Shaxian snacks. After I grew up, these snacks represent the diligent spirit of people from Fujian Province," said Lin Liju, investor of the Shaxian Delicacies.
沙縣小吃投資人林里舉說(shuō):“一籠蒸餃五角錢(qián),好吃而不貴,是我童年時(shí)期對(duì)沙縣小吃的記憶。成年后,沙縣小吃對(duì)我來(lái)說(shuō)代表了福建人的拼搏精神。”
With its good quality and competitive price, the Shaxian Delicacies has become a local pillar industry which creates a turnover of over 10 billion yuan annually.
高質(zhì)低價(jià)的沙縣小吃已成為當(dāng)?shù)氐闹еa(chǎn)業(yè),年?duì)I業(yè)額超過(guò)100億元人民幣。
"In my childhood, food stalls could be seen everywhere in my hometown in Fuzhou. But this is just a small step for the company, the Shaxian Delicacies, in going global," said Ms Shao.
邵彬芳說(shuō):“在我小時(shí)候,我的家鄉(xiāng)福州到處都是小吃攤。但對(duì)沙縣小吃公司走向全球來(lái)說(shuō),這只是一小步。”
中國(guó)美食走出國(guó)門(mén)
The Shaxian Delicacies is not the only case where cheap and quick Chinese snacks are loved by foreigners.
除了沙縣小吃,還有很多廉價(jià)的中式快餐也受到了外國(guó)顧客的青睞。
蘭州拉面 日本爆紅
2017年,國(guó)內(nèi)知名蘭州拉面老字號(hào)“馬子祿牛肉面”在日本的首家分店在東京神保町正式開(kāi)業(yè)。
作為新面孔的蘭州拉面初入東京就備受關(guān)注,大受熱捧。日本民眾排起長(zhǎng)隊(duì)只為一飽口福。
很多日本美食博主也在網(wǎng)上給出好評(píng)。美食博主asobuneko評(píng)價(jià)說(shuō):蘭州拉面的湯汁鮮美,而且面條勁道。配料配上牛肉片,辣子,香菜等,吃一口滿(mǎn)嘴留香,讓人感嘆不愧是中國(guó)第一面。
“老金煎餅”物美價(jià)廉
紐約中城的范德比爾特美食集市是周邊上班族午飯時(shí)間的好去處,入口處一家有中文招牌的攤位前常常排起長(zhǎng)隊(duì)。這家賣(mài)的是一種在美國(guó)略顯“非主流”,但在中國(guó)卻家喻戶(hù)曉的小吃——煎!餅!
Brian Goldberg, the owner of Mr. Bing's, one of the first Jianbing stands in New York City, ate Jianbing for breakfast when he studied Mandarin in China 20 years ago. Goldberg loved this flap Chinese crepe so much that he brought it to America.
“老金煎餅”的老板布賴(lài)恩·戈德堡在紐約開(kāi)設(shè)了第一家煎餅攤。20年前,他在中國(guó)學(xué)習(xí)漢語(yǔ)時(shí),早餐就常吃煎餅。戈德堡太愛(ài)吃煎餅了,還把它帶到了美國(guó)。
在經(jīng)過(guò)大量試驗(yàn)之后,老金鎖定了烤鴨、醉雞等幾種口味的肉。他說(shuō),現(xiàn)在最熱銷(xiāo)的就是烤鴨味煎餅和原味煎餅。據(jù)說(shuō),“老金煎餅”一天能賣(mài)幾百套。
不敢相認(rèn)的黃燜雞米飯
去年,被國(guó)外媒體熱炒的黃燜雞米飯也在美國(guó)落地了。
在國(guó)內(nèi)基本不會(huì)超過(guò)20平米的黃燜雞小店,到了美國(guó)立刻擴(kuò)大到139平米,40個(gè)座位……

和意面PK的熱干面
And a traditional dish of central China's Wuhan City, the hot-dry noodle, has been taken to Italy by a couple who opened a restaurant in Florence. The dish has become very popular to have attracted many local diners.

與在武漢吃的熱干面相比,面的味道少了點(diǎn)辣,多了幾?;ㄉ缀蛶追只靥?。老板表示,這是經(jīng)過(guò)了一點(diǎn)改良,意大利人喜歡食品中有點(diǎn)甜味,就在蘿卜丁的制作過(guò)程中,多加了點(diǎn)糖。
西安臘汁肉夾饃走向歐美
在紐約不少人都在快餐店里買(mǎi)肉夾饃,幾乎家家快餐店都有賣(mài),雖然不是原汁原味的但是也足夠的受人歡迎,還有的店鋪專(zhuān)門(mén)聘請(qǐng)中國(guó)人來(lái)做西安肉夾饃,并且在招牌上標(biāo)明。我們的肉夾饃,不僅僅是平常美國(guó)人的最?lèi)?ài),甚至連美國(guó)學(xué)者也喜歡吃。
今年,西安肉夾饃在抖音上著實(shí)火了一把,又被推向歐美和四國(guó)合作企業(yè)簽約,當(dāng)?shù)剡€推出西安肉夾饃制作標(biāo)準(zhǔn)。
美籍華裔Jason Wang,用父親從家鄉(xiāng)西安帶來(lái)的家傳食譜,在美國(guó)紐約創(chuàng)造了“西安名吃”(Xi’an Famous Foods)連鎖餐廳。干扯面、涼皮、泡饃等,讓許多紐約人大開(kāi)眼界,其中最受歡迎的就是肉夾饃。
烘烤微焦的饃,配上多汁的鹵肉和清爽的蔬菜,每年就能吸引14萬(wàn)名顧客,收入超過(guò)一百萬(wàn)美元!如今,“西安名吃”第十家連鎖店已經(jīng)開(kāi)張,生意仍舊十分火爆。
